Favorite Recipes
I adore food! I have found the best way for Matthew and I to eat what we want while being health conscious is to make most of our food from scratch. Most of the recipes I find are through other blogs or racing/athlete cookbooks. The following are tried and true recipes/books that we really enjoy and most are healthy (after all we do work out to indulge sometimes, right?). Bon appetite!
The Food Zone Cookbook
This is the first cookbook we got after Matthew signed up for Ironman Canada. It's by Biju Thomas and Allen Lim who traveled with pro cyclists during tours and learned all about properly fuel and hydrating endurance athletes. The recipes are simple with everyday ingredients. There is also a chapter on portables, homemade foods to take on the road with you while you train that make eating sports bars taste like cardboard. I could not love this book more!

Pumpkin Steel-Cut Oats
I adore everything pumpkin and when I found this recipe I just knew I had to make it! The author's instructions are for the stovetop but she says you can easily make it in the slow cooker. I made mine in the rice cooker. It made 8 servings for me and I added toasted walnuts and half and half on top. Note that this recipe is spice heavy, so if you're not a fan of spiced up pumpkin, you may want to half the cinnamon and ginger.

Matthew and I eat fish at least 2 times a week so I'm always trying to find creative ways to serve it. This is baked tilapia with seasoned whole wheat breadcrumbs a little bit of swiss on top. It's one of our go to week night meals.

Orange Almond Macaroons
So you're going to hate me for this one but I don't have a link for the recipe. HOWEVER, I included it so you can see the yumminess that is in the Food Zone Cookbook. This is a portable recipe that you can take on your workouts. It's the perfectly sweet with a hint of orange. It''s a favorite as a pre workout snack in our house.

Lasagna Soup
When it gets cold outside the first thing I want is soup! I generally make one dish on Sunday and then eat that dish for lunch all week long. Soup is a great choice since Matthew doesn't really like them much. This soup is everything you want in a soup plus has the heartiness of lasagna and it's incredibly healthy.

Salmon Burgers
This is one of our absolute favorite weeknight meals because it's easy, delicious, and hits all of the main food groups (well except fruit). We usually make ours with an Asian flare of hoisin mayo. This is a must try!

Pumpkin Butter (shown here with granola, raisins and greek yogurt)
I'm always trying to find ways to incorporate more pumpkin in my diet because it's delicious and healthy. This recipe comes from a blog I love, Smitten Kitchen and you will find it here. *Note- this recipes has a tad too much ginger for my taste so spice according to your taste.

Individual Steel Cut Oat Cups
Breakfast is the most important meal of the day so I'm constantly trying to make it be enjoyable. This recipe is healthful but does take a good amount of prep. I recommend making it on Sunday (starting soaking on Saturday) so you can eat the cups all week long. Find the recipe here.

The Best Recover Drink
After every workout I make sure to drink protein powder to help my muscles recover. I've recently discovered the best flavor combination ever for this traditionally not so delicious beverage! It's one scoop protein powder (I prefer Osmos but was out when I took this photo), espresso shot and Lactiad 2% milk! The protein powder here is On Mocha Cappucchino Whey Protein Powder.
